Practice Your Thanksgiving Turkey

A turkey breast is the best practice run. Same brine, same rub, same temp in the thickest part, for half the time and a fraction of the money. You find out now whether your smoker runs hot on one side, if you've picked the right recipe, or any other pain points. Then you do it again in November with nothing left to guess at.

🍽️ WEEKNIGHT WINNERS:

Sharp Tip:

Spatchcocking cuts a turkey's cook time by roughly a third and turns every square inch of skin toward the heat. Use kitchen shears to cut down both sides of the backbone and press the bird flat. Practice on a chicken this week if you have never done it, because Thanksgiving morning is a bad time to learn a new knife move.

⏳ WEEKEND PROJECT

Smoked spatchcock Turkey

The full dress rehearsal. Whole bird, backbone out, flat on the smoker, and you time the entire cook the way you will on the day. Carve it, then eat sandwiches all week, and head into November already knowing how your smoker handles a whole bird.
