Grilled Jerk Chicken Skewers

Ever since we had our friend Kunchi's jerk ribs at a live fire festival we hosted, we've been on the hunt to master the spice blend at home. The quick scotch bonnet marinade clings to every bite because we skewer chicken thighs, our trick to speeding up the cook time and getting char on every single bite.

Sharp Tip:

Acidic marinades, like jerk seasoning, break down chicken texture fast - after about 4 hours in a citrus-and-vinegar-based jerk paste, which can make your chicken mushy. Marinate for 1 hour to 4 hours, tops, then let the grill do the rest.
